Have some leftover rice? Try using it in this super simple Asian-inspired salad. It combines with healthful crisp raw veggies and a lovely gingery sesame dressing to make one of our favorite light meals, and it couldn’t be easier to throw together.
INGREDIENTS
2 cups cooked brown rice
1/2 cup snow peas or sugar-snap peas, cut into thirds
2 tablespoons chopped cashews
1 stem broccoli, peeled and sliced
Dressing
1 teaspoon toasted sesame oil
1 teaspoon balsamic vinegar
1/4 teaspoon garlic powder
1 1/2 teaspoons tamari or other good-quality soy sauce
1 teaspoon pickled ginger, minced
1. Place rice in a serving bowl. Whisk together the dressing ingredients and add to rice, stirring to combine.
2. Add snow peas, cashews, and broccoli. Toss to combine and serve immediately.
Serves 4.
