Try making these for your own dream boat. You‘ll know that, even though they taste decadently rich, they’re actually good for you both.
3 ripe avocados (we prefer the dark-skinned kind)
1/2 fresh lemon
1 cup canned diced tomatoes, well-drained
3 scallions, chopped, including the green parts
1/4 cup fresh parsley, chopped
1 tablespoon fresh basil, chopped (or 1 teaspoon, dried)
1/8 teaspoon dried rosemary
1/4 cup extra-virgin olive oil
1 small garlic clove, pressed or finely minced
salt and freshly-ground black pepper, to taste
1. Slice avocados in half lengthwise and carefully scoop out the flesh, discarding the pits and leaving the shells intact.
2. Coarsely chop the avocado flesh and place it in a bowl, sprinkling it with the juice from the fresh lemon. Add tomatoes, scallions, parsley, basil, and rosemary, stirring to combine.
3. In a small bowl, whisk together the olive oil, garlic clove, salt, and pepper and pour over avocado-tomato mixture.
4. Mound this mixture into the avocado “boats” and serve.
