Cherry Yogurt Parfaits Recipe

Adapted from “A Rainbow of Fruit Desserts”, a How-To Guide (Care2 Publishing, 2003).

Here’s a dessert that you can throw together in no time–but it’s super pretty and also completely luscious. A great last-minute dessert for parties and picnics: just bring the ingredients along in a chilled cooler and assemble on the spot.

Satisfyingly creamy and filled with sweet cherries: fresh summertime bliss!


INGREDIENTS

2 cups fresh cherries, washed, pitted, and sliced in half
2 cups vanilla whole-milk yogurt
fresh mint or a few pitted, halved cherries, optional, for garnish

Spoon about 1/4 cup cherries into each of 4 tall glass parfait cups, top with 1/4 cup yogurt, then repeat layering. Garnish with a sprig of fresh mint or a few cherries, if desired.

Serves 4.
