Chilled Cherry Soup

Inspired by The Gourmet Cookbook, edited by Ruth Reichl (Houghton Mifflin, 2004).
Plump, sweet, juicy cherries are ripe for the picking right now–the perfect time to showcase them in a dapper dessert. But in a twist of irony, cherry season is all too often accompanied by mind-numbing heat. If your kitchen is too hot to handle a pie or cobbler, consider this easy and elegant chilled cherry soup instead. Phytonutrients and antioxidants never looked better…or tasted so sweet and cool!
INGREDIENTS
(Note: We use sour cherries here, if you use sweet cherries you can decrease sugar to taste)
3 cups plus 2 tablespoons cold water (preferably filtered)
3/4 cups sugar, preferably organic
1/2 teaspoon finely grated lemon zest
1/4 teaspoon ground cinnamon
1 1/4 pounds fresh sour cherries, pitted
2 tablespoons cornstarch
3 tablespoons sour cream
1 1/2 tablespoons heavy cream
1. In a heavy 3-quart saucepan, mix 3 cups of water with sugar, lemon zest and cinnamon. Bring to a boil while stirring to dissolve sugar, and then let boil for 2 minutes. Add the cherries and return to boil for 2 minutes.
2. Whisk cornstarch with the remaining 2 tablespoons of cold water and then stir into pot with boiling cherries. Whisk mixture while simmering for about 2 minutes, until it is slightly thickened. Remove from stove and cool completely, uncovered, then chill in refrigerator, covered, for at least 2 hours.
3. Whisk heavy cream and sour cream together right before serving. Serve soup in four bowls with a swirl of the cream mixture.
Serves 4.

add your comment »Hey, easy on the hostility, guys! What's the judgement and sarcasm doing on Care2? Isn't this the place to get away from all that? And there is a difference, by the way, between something that is high in calories and nutrients and something that is inherently unhealthy. Maybe a better term than "unhealthy" would be "high in fat and sugars"-- believe it or not, occasional fats or sugars, depending on where they come from and what kinds of fats/sugars, can be supportive to an active lifestyle.

OMG! There's a hair over 1 tablespoon of dairy per serving in this, and the health freaks have to spaz out. Spare me!

i don't think it is fair for you to call someone anorexic for being health conscious. it is reasonable to say that a recipe containing HEAVY CREAM AND SOUR CREAM is not exactly light.
