Adapted from The Vegetarian 5-Ingredient Gourmet, by Nava Atlas (Broadway Books, 2001).

Crunchy celery, bell pepper, and tasty scallions combine colorfully with corn to make a people-pleasing, child-friendly salad that will see you deliciously through many a cookout or picnic.

Corn Relish Salad also works well as a side with sandwiches or veggie burgers.

INGREDIENTS
One 16-ounce package frozen corn kernels, thawed
2 small red bell pepper, finely diced
2 large celery stalks, finely diced
2 scallions, green parts only, thinly sliced
1/2 cup natural low-fat vinaigrette, or to taste
Salt and freshly ground black pepper to taste

Combine all ingredients in a serving container and toss well. Serve at once or refrigerate until needed.

Serves 4.
