Creamy Peach Freeze Recipe

When I was little, the summertime treat I always longed for was homemade ice cream made with juicy fresh peaches in our old-fashioned hand-cranked ice cream maker. But who has time to do that anymore?

Still, when July rolls around I start hankering for that real peach ice cream taste.

So, for all of us who want the pleasure of homemade peach ice cream but don’t have time to make it from scratch, here is the answer. Creamy Peach Freeze is loaded with taste from farm-fresh peaches but it uses your choice of store-bought vanilla ice cream (or non-dairy frozen dessert, for a vegan version) as the jumping-off place. Fast to make and absolutely divine.

INGREDIENTS

1 quart container good-quality vanilla ice-cream or non-dairy frozen dessert
3 cups fresh peaches, peeled and chopped
1/4 cup brown sugar
pinch of salt

1. Place peaches in a cold saucepan with sugar and salt. Turn heat on to low and gently saute mixture, stirring occasionally, until peaches are soft and juicy. Chill softened peaches in refrigerator.

2. Allow ice cream to soften slightly at room temperature, or in microwave.

3. In a large bowl, mix softened ice cream and peaches. Spoon mixture into parfait glasses and refreeze for a few minutes, or serve as is.

Serves 4.
