Looking to get more kale into your diet? Rather than loading your pizza with pepperoni, bacon, or sausage, try this delicious treat! This recipe is vegetarian and can be made gluten-free if desired.
Crispy Kale Pizza | adapted from The Kitchn
(*use organic ingredients as often as possible)
1 large diced or sliced fresh tomato (go for an heirloom if you’re feeling extra colorful!)
2 cloves finely minced garlic
1 small bunch lacinato kale
2-3 Tablespoons olive oil
1 store-bought or homemade pizza dough (room temperature)
1 cup fresh ricotta cheese
Preheat oven to 400 degrees F.
De-stem cleaned and dried kale and rip into 1 inch pieces. Toss in 2 Tbsp. olive oil. Spread kale in a single row on a baking sheet, season lightly with salt, and bake 12-15 minutes, or until crispy.
Raise oven temperature to 500 degrees F.
While oven preheats, lightly saute garlic in 1 Tbsp. olive oil on medium heat, until aromatic — about a minute. Set aside.
Slowly stretch dough with floured hands and set on a baking stone (the stone must be preheated — a greased baking sheet will do in a pinch).
Scatter fresh tomato, dollops of ricotta, crispy kale, and garlic over the dough.
Bake for 12 minutes, or until cheese bubbles and crust is golden. Let cool. Enjoy!
