Easy Summer Rice Salad

YIELD 6 servings

Ingredients

3 cups cold basmati rice (leftover takeout works wonderfully)
1/3 cup Italian dressing
2 large tomatoes, chopped
1 cucumber, peeled, seeded and chopped
1/2 red onion, chopped
1/2 cup chopped parsley

Instructions

1. Combine all ingredients in a bowl. Toss well.

Per serving: 160 Calories, 4g Fat, 0mg Cholesterol, 140mg Sodium, 29g Carbohydrate, 1g Fiber, 3g Protein
