Two-Ingredient Fluffy Vegan Pressure Cooker Mashed Potatoes

You can make these in an Instant Pot or a stovetop pressure cooker.Instead of adding vegan milk at the end, you’ll use the leftover starchy cooking water to mashyour potatoes. It might sound a little dubious, but trust me. My family likes these even more than the ones Iused to make with vegan milk!

Ingredients

  • 4 cups chopped thin-skinned potatoes (1" pieces. Yellow, red, or white are fine, but yellow is my favorite. Do NOT use Russet potatoes for this recipe.)
  • 1/2 cup water
  • 2-3 tablespoons olive oil OR avocado oil OR vegan butter
  • sea salt, to taste (You'll need less salt if you used vegan butter, since it already has salt in it.)
  • chopped green onions (optional)

Instructions

  1. Toss your potatoes into your pressure cooker. Pour in the water, and give a quick stir. Bring to high pressure for 5 minutes, then do a natural release (at least 10 minutes).
  2. Transfer the potatoes and the cooking water (DO NOT DRAIN!) to a large bowl. Add the vegan butter or oil, and mash until you reach a light, fluffy texture. You can add water, one tablespoon at a time, to thin, if needed.
  3. Salt to taste, and serve hot. You can top with a little green onion, if that's your thing.
