Everybody loves pizza, but the saturated fat of most conventional versions is not a good thing for our arteries. That’s where this fabulous Mexican-inspired version comes to the rescue: Great zesty taste with protein and heart-healthy fiber from black beans and corn makes this a pizza that your family will love and that you will love to serve.

Here is the people-pleasing recipe for Fresh Corn and Black Bean Pizza.

INGREDIENTS
1 plum tomato, diced
1 cup cooked or canned black beans, rinsed
Kernels from 2 ears fresh corn
2 tablespoons cornmeal
1 pound prepared whole-wheat pizza dough
1/3 cup barbecue sauce
1 cup shredded smoked mozzarella

1. Preheat oven to 450F. In a medium bowl, combine the tomato, beans, and corn.

2. Sprinkle the cornmeal evenly on a large baking sheet. Roll or stretch dough to make a 12-inch circle and place on top of cornmeal. Evenly spread barbecue sauce on crust, then sprinkle with bean and vegetable mixture, topping with an even sprinkling of cheese.

3. Bake 6 minutes, or until cheese is melted and crust is browned.

Serves 6.
