Pleasantly Surprising Pancakes
Normally, I don’t like pancakes. These, however, surprised me with their hearty and delicious flavor. Full of whole grains, protein, calcium and an array of vitamins, these pancakes will give you a sweet start to a wonderful day.
Ingredients
1 c whole-wheat flour
1/2 c old-fashioned rolled oats
1/4 c whole-grain cornmeal
3 Tbsp flaxseed meal
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
3 Tbsp pure maple syrup
1 whole egg – beaten
1-1/2 c low-fat buttermilk
4 c fresh berries of your choice
Directions: In large bowl, mix flour, oats and grain meals with baking powder, baking soda, cinnamon and nutmeg. Make a well in center and pour in maple syrup, egg and buttermilk. Mix until dry ingredients are moist.
Heat large, non-stick skillet at medium heat. Once heated through, drop spoonfuls of batter onto skillet and cook until edges are dry. Flip pancakes and cook until other side is slightly browned. Serve with fresh berries.
Makes 4 Servings

I just need to know how to eat less. I have a raging appetite which, if I indulged it, would swell me to gargantuan proportions. The only option I seem to have is to eat less and thereby starve myself. And I know what's healthy and what's not.
