Ginger Jaggery Lemonade

Once I discovered palm jaggery, a traditional Indian sugar made from palm tree sap, I started playing around with some very fun Indian recipes. This one for jaggery lemonade simply makes me swoon. Tart, spicy, sweet, mmmm.

6 tablespoons jaggery
3 ounces fresh
ginger, crushed
1 teaspoon cayenne
pepper
1/2 cup freshly squeezed
lemon juice

Add jaggery to 4 cups of water and stir to dissolve. Add crushed 
ginger, pepper, and lemon juice. Let sit for one hour, strain, and chill
