Green Goddess Salad Recipe

Adapted from Detox and Revitalize, by Susana L. Belen (Vital Health Publishing, 2005).

This glorious salad is based on health-promoting avocado, along with summery fresh tomatoes and bell peppers. It’s tossed with a simple dressing filled with nutrient-rich fresh herbs, lemon juice, and red onion to make a salad fit for a goddess.

Some of the most flavorful foods of summer are in this simple salad, to help you feel more revitalized and energized.

INGREDIENTS

Salad

2 ripe avocadoes, cut into cubes
4 medium tomatoes, cut into chunks
2 bell peppers, cut into short slivers
2 cup mushrooms, sliced
1 cup sunflower seeds, soaked 12 hours

1. Layer ingredients in a medium salad bowl and drizzle with Healthful Green Dressing (recipe below), to taste. Toss to combine and serve.

Serves 4

Healthful Green Dressing

Juice from 2 lemons
1 cup water (or 3/4 cup olive oil)
1 red onion
Fresh green chiles, seeds removed, to taste
1 small bunch cilantro
1 pinch cayenne
2 cloves garlic
1 small bunch parsley

1. Pulse all ingredients in a food processor or blender until chopped coarsely.
