Grilled Apriums with Mascarpone (with video)

This simple recipe uses grilled apriums with mascarpone. An aprium is about 3/4 apricot and 1/4 plum. However, any stone fruit will work well. Select the freshest fruit you can find for a decadent dessert made in less than ten minutes!

6 apriums, apricots, or peaches
Mascarpone (or cream cheese)
Olive oil
Fresh mint

1. Halve the apriums and remove the center pit

2. Drizzle olive oil on a grill plate on medium heat

3. Grill the apriums on both sides until they soften

4. Serve with dollop of marcarpone and a touch of mint
