Harmony Hominy Soup

Harmony Hominy Soup

There is nothing like a hot bowl of soup on a cold winter night. This soup is very warming and flavorful, with Mexican flavor. You can add less spice or more, depending on your preference.

1 ½ cup onion, chopped
1 cup celery, chopped
1 teaspoon garlic, minced
Pinch oregano, dried
1 ½ teaspoon cumin, ground
1 ½ teaspoon chili powder
½ teaspoon taco seasoning
2 teaspoons olive oil
5 cups water
3 cups hominy, canned, drained and rinsed
2 tablespoons green chilies, diced
¼ cup black olives, sliced
½ cup corn
¼ cup sharp cheddar, shredded
1/3 cup sour cream

  • Sauté onion, garlic, celery and spices in oil in soup pot on medium heat.
  • Add water and hominy to pot. Bring to a boil and simmer 45 minutes.
  • Add chilies and remaining ingredients, except for sour cream and cheese.
  • Remove from heat, add sour cream and cheese. Whisk until sour cream melts in.

Serves: 4-6 people

Total cooking time: 1 hour

Love this! But not the sour cream, so that Imust replace with something else.

I have made this twice, my husband loves it. The second time I did change it by adding tomatoes and instead of the measly 2 tablespoons of green chilies, I added 3 large, seeded, chopped Hot Hungarian peppers I needed to use up. It was wonderful.

Soup sounds wonderful but hominy has had most of the most nutritious parts removed. Will use chickpeas in its place.
