I had the good fortune to be way down East in Maine for a few weeks this month, and there were wild Maine blueberries everywhere.
I even went to the blueberry festival in Machias, where I ate melt-in-your mouth wild blueberries. I discovered the Bar Harbor Jam Company, and their wonderful berry cookbooks.
The recipe I’ve pulled here for us is from The Bar Harbor Jam Company’s “The Maine Wild Blueberry Cookbook.”
INGREDIENTS
4 egg whites
1/4 teaspoon cream of tartar
1 cup sugar
1/2 teaspoon vanilla
2 cups fresh blueberries
Whipped cream or yogurt (no-fat yogurt will be needed to keep this recipe fat free!)
Beat the egg whites and cream of tartar until stiff but not dry. Add sugar bit by bit, beating continuously. Stir in vanilla and pour into a pie plate. Bake at 275 F for 1 hour. Cool. Cover with blueberries, and garnish with yogurt or cream.
