This simple spinach dish has lots of yummy flavors. Kalamata olives and sundried tomatoes are wonderful, add the pine nuts for texture, and you have an awesome spinach dish that you will enjoy for years to come.
3/4 cup sweet onion, chopped
1 teaspoon garlic, minced
18 oz. spinach, well cleaned
1 tablespoon pine nuts, toasted
2 tablespoons sundried tomatoes in oil
2 tablespoons kalamata olives, pitted and chopped
½ teaspoon granulated onion
¼ teaspoon sea salt
1 tablespoon olive oil
- Sauté onion and garlic in a large frying pan with olive oil until caramelized. Add spinach and stir to wilt.
- Remove from heat and add remaining ingredients.
- Serve immediately.
