Putting NY Times Vegan Mayo Recipe to the Test

I hadn’t actually made my own†bean juice mayo before, so†I was excited to try†the NY Times recipe. It looked basic enough, and†I had the necessary ingredients in my kitchen already (that’s always a plus with any recipe).

Since I don’t make my own mayo regularly, I stock my fridge with store-bought. My favorite vegan mayo, hands down, is Vegenaise. Vegenaise†doesn’t have that Miracle Whip-like tang that Just Mayo does. It reminds me more of the Hellmann’s that we ate growing up. My mayo-loving mom even likes Vegenaise, which is high praise.

This recipe was†incredibly easy. You just add all the ingredients, except the oil, into a glass container. I used a two cup glass measuring bowl:

Whip them together with an immersion blender:

Keep the immersion blender going while you drizzle in the oil, then whip for 4-5 minutes until you have a thick mayo:

I was impressed with the taste and texture of the bean juice mayo! If you are like me and prefer less tang, you might back off on the mustard powder by 1/2 teaspoon, but even as-is, I can’t wait to spread it onto sandwiches for the rest of the week!

I never liked mayo growing up, but now I too love Vegenaise. So does my mother, and she still eats regular mayo, so high praise indeed. I love the idea of the bean water egg replacer, I just find it sort of funny that every recipe I read is based on people opening a can of beans. Doesn't anyone boil their own? It's so easy. Great thing about that is that you can scoop off the starch as it fluffs up on the surface of the boiling water. Half the work for the mayo is already done, then! Well, I'll give this recipe a go. Thanks for posting.
