Oh-So-Good Kale Salad

Oh-So-Good Kale Salad

Raw kale salads are more popular these days since kale is a “superfood” and has many health benefits. We add some different ingredients to ours to make it chock full of tastes and textures.

8 cups dinosaur kale (or regular), cut up small
cup carrots, shredded
1 tablespoon sunflower seeds (roasted or unroasted)
1 tablespoon pine nuts
3 tablespoons dried cranberries
4 artichoke hearts, marinated style, cut in small pieces
1 avocado, cut in cubes
cup balsamic vinegar
cup olive oil
teaspoon sea salt

Toss cut up kale in bowl with oil, vinegar and salt. Let sit for 15 minutes, tossing twice to coat well.
Add remaining ingredients and toss well. The salad tastes best if you let it sit for a couple of hours to allow the kale to break down. But if you are short on time you can serve sooner.

Serves: 4-6

Total cooking time: 2 hours

I like Kale but due to one or two meds, I have to avoid it. Consuming it can actually be deadly for me.

Oh Yum! I had a Kale Chicken salad that was delicious. I believe they used peanut sauce, cilantro, scallions, avocado, etc., but it looked very similar.

Kale is one of the healthiest vegetables around and one way to be sure to enjoy the maximum nutrition and flavor from kale is to cook it properly. Also, after cutting it, let it sit for at least 5 minutes. I've also have read that Raw kale in particular "can be hard on the digestive system" — meaning it cause bloating, gas and other abdominal issues. Personally, I prefer mine cooked.
