Friends and family always ask for seconds of this quick and easy gluten-free dessert, given to us by my neighbor Cathy Walker.

Cathy says that using the most flavorful apples available in the season you make this is a key for success. The best choices of apple for mid-winter and spring are organic Red Delicious, Golden Delicious, Newtown Pippin, Baldwin, Rome Beauty, Northern Spy, Stayman, and Winesap. The tarter the better.

INGREDIENTS
4 cups tart apples
2 tablespoons lemon juice
½ cup brown rice flour
½ cup Sucanat (organic sugar)
¼ cup butter
½ teaspoon salt
1 teaspoon cinnamon

Peel, core and slice the apples into a bowl, and sprinkle with lemon juice. Blend the rest of the ingredients in a bowl. Spread the apples in a bake pan, and cover with the blended ingredients. Bake for about 30 minutes or until golden.

When the blended ingredients (flour, sugar, butter, etc.) are spread over the apples and baked, they form a crust which is what makes this a "crisp". That's what you see in the picture.
It looks to be very cinnamony.

Looks like there's some sort of granola topping in the photo, but no mention in the recipe. Isn't something like that necessary to fit the definition of a "crisp"?
