Raw Corn Salad with Zesty Lime Dressing

Inspired by a recipe in Food and Wine Magazine.

Why cook when it’s hot? Fresh corn is so sweet it doesn’t need cooking, anyway. Try this quick and easy cool salad with corn, snappy radishes, and a zesty lime dressing you’ll have to taste to believe: deliciously tart, sweet, and spicy. We give this recipe enthusiastic thumbs-up!

INGREDIENTS

2 tablespoons fresh lime juice
1 small jalapeno, seeded and chopped
1 1/2 teaspoons honey
1/4 teaspoon ground cumin
1/4 cup vegetable oil
Coarse sea salt and freshly-ground pepper
Kernels from 4 ears of fresh corn
6 medium radishes, halved and thinly sliced crosswise
1/2 cup coarsely chopped fresh flat-leaf parsley
1/4 small red onion, thinly sliced

1. Whiz the lime juice, jalapeno, honey, and cumin in a blender. Add the oil with the blender still running. Add salt and pepper to taste.

2. Place corn, radishes, parsley, red onion, and dressing in a large bowl and toss to mix.

Serves 4.

WOW! This is a very delicious salad. Who would have thought that raw corn tastes better than cooked? The sweet and spicy touch from the dressing gives it an almost exotic flavor. You will love it!
