Raw, Vegan Cinnamon Buns

These raw, vegan, superfood cinnamon buns are delicious, healthy, quick, and require no cooking!

Dough:
4 cups walnuts (almonds can be substituted)
4 cups pitted dates
¼ cup cinnamon
pinch Celtic salt

Filling
4 tablespoons coconut oil
2 tablespoons cacoa powder (unsweetened chocolate powder)
3 tablespoons raw honey (for a vegan version use maple syrup, or agave)
1 teaspoon vanilla extract

Directions:
The walnuts can be soaked and rinsed overnight. Then dehydrated about 24 hours. You can also skip this step if you do not have a dehydrator. Puree the nuts, dates and salt in a food processor, adding just enough water to make a dough. Dust a clean counter or cutting board with the cinnamon powder and press the dough into the cinnamon, making an oblong shape. Spread dough over the cinnamon. Blend up filling by hand or in a food processor. Spread over the nut dough. Roll it up tight, capturing the filling between the dough. Slice with a knife. Store in the refrigerator. If you freeze your buns, they will keep for months. Enjoy with a cup of herbal tea, or to celebrate when friends drop by!
