Simple and Sensational Summer Peach Salad
I tried this wonderful recipe and it made my taste buds sing. The simplicity of this salad gives no clue to its intense juicy flavor. Whether you enjoy this as part of a regular family meal, or serve it to your guests, this salad is always going to be a super hit.
Each ingredient used in this recipe has multiple health benefits to offer you. The peaches are a treasury of antioxidants, vitamins and minerals. Honey boosts immunity and cures infections. Olive oil has heart-healthy benefits, among many others. Walnuts are a famous brain boosting food. Rocket leaves contain phyto chemicals that do wonders for your overall health. Cheese contains vital protein and calcium. Freshly crushed pepper reaches all these benefits deeper into your cells.
Here is the recipe:
2 fresh, ripe peaches, cut into halves
1 cup rocket (arugula) leaves
½ cup walnuts
½ cup cottage cheese
2 tbsp extra virgin olive oil
1 tbsp honey
Salt and pepper to taste
Toast the walnut halves in a single layer with the oven at 350°.
Keeping the oven at 400°, grill the peach halves with the cut side down, until the tops are golden. Turn them over and place a piece of cheese in the centre of each peach. Bake again, until the cheese melts.
Toss the rocket leaves in olive oil, sprinkle with salt and pepper and scatter it on a salad plate.
Place the peaches, walnut halves on the leaves and drizzle honey on them. You could also add a little balsamic vinegar to deepen the flavor.
