Simple Early Spring Vegetables Recipe
This recipe is just about as simple as it gets, but filled with the flavors and colors of spring vegetables like new peas and asparagus. When we use the freshest ingredients we can find, we nourish ourselves in a deep and satisfying way.

Use the freshest, most tender produce available.
4 tablespoons oil or butter
3 onions, sliced in rings
6 outer leaves of new lettuce, chopped
2 cups peas
2 carrots, sliced
2 cups asparagus, cut in pieces
1 cup tiny new potatoes
1. Heat oil in heavy pot. Add vegetables. Cover and cook over slow fire, stirring occasionally.
2. When carrots are tender, take off fire and serve.
