Spicy Sweet Potato Puree

Your family will be delighted with the fresh taste of sweet potatoes in this upbeat, updated version of an old family favorite–and they’ll love the spicy kick! Unhealthy sweet potatoes dripping with butterfat and gooey with sugary marshmallows will be a thing of the past once you try this luscious low-fat sweet potato recipe from one of our favorite Care2 designers instead.

INGREDIENTS

2 pounds sweet potatoes, peeled and cut into 2-inch cubes
3/4 cup Greek-style yogurt or 1/2 cup soy yogurt (for a vegan version)
1/2 to 1 cup nonfat milk (or soymilk for a vegan version)
Juice of 1/2 lime
Chipotle powder, to taste
Sea salt, to taste
Pink peppercorns, ground, to taste
A few sprigs of fresh cilantro and a honey drizzle, for garnish (optional)

1. Boil sweet potato cubes for 15 to 20 minutes, until tender. Drain and place sweet potatoes in food processor.

2. Add Greek-style yogurt and 1/2 cup milk and process until smooth. Check consistency and add more milk if you like, then add lime juice, and chipotle powder, sea salt, and ground pink peppercorns, to taste.

3. Transfer puree to a serving bowl and garnish with fresh cilantro sprigs and a drizzle of honey, if desired.

Serves 4 to 6.

When printing out this recipe an extra page and a lot of color ink goes to a picture of potatoes. Can we have the option of no pictures?

I made this over the weekend in a smaller amount and loved it. Tonight its back on the menu and will get topped with Chili. I'm looking forward to it, and I think I've found a definite new side to go into our meal rotation.

I did find one thing... if you can't find chipotle powder, Red Hot hot sauce now has a chipotle version that works pretty well. I used the last of the powder in the first batch and had to switch for tonights. Tastes great, a little hotter than just the powder, but an extra spoonful of honey helps to smooth out the heat.

Elly, it comes from smoked ripe jalapeno peppers. It's not as spicy as an unripe jalapeno, and it's got a nice, smoky flavor to it. They don't carry it at my local store, so I have to order it online.

What's Chipotle powder? I'm in the UK and have never heard of it.

If you like the sweet version of this dish try piloncillo, it can be found in stores carrying Mexican ingredients and is easy to prepare, just melt in a pan with a bit of water, constantly stirring to avoid sticking and drizzle over the sweet potatoe, it gives a very different flavour.
