Simple and Seasonal: Strawberry-Yogurt Parfaits

Whether you pick you own strawberries or purchase them, be aware
that this lovely fruit is consistently ranked as one of the top produce
varieties most heavily sprayed with pesticides. What’s the answer? Try
to buy organic strawberries. Yes, they are more expensive, but they’re
also riper, sweeter, and juicier than mass-produced strawberries.
Parfaits are a healthy, elegant dessert, and making them with this recipe is so easy! Make sure to use lush, ripe fruit and a good, creamy low-fat yogurt.
Two 8-ounce containers low-fat organic vanilla yogurt or soy yogurt
1 pint fresh strawberries, sliced
Grated semi-sweet chocolate, toasted sliced almonds, or granola for topping
Use 4 parfait dishes if you have them; if not, medium-sized glass
tumblers will do. For each serving, layer 1/4 cup each of yogurt and
fruit in the parfait dish; repeat each layer, then do the same for the
other parfaits. sprinkle on desired topping and serve.
VARIATION: When blueberry and strawberry season briefly overlap, make a visually enticing parfait by combining 1 cup blueberries and 1 cup sliced strawberries.
