Sunny Peach Pie Recipe

The amber glory of this sun-shaped dessert, as well as its
mouthwatering aroma and flavor, satisfies us deeply in many ways.

When we create a little sun that feeds us so deliciously, our hearts
are warmed by this embodiment of the sun’s power.

INGREDIENTS
1 unbaked pie crust of your choice
3 to 4 cups sliced fresh peaches
2 teaspoons unbleached flour
1/4 cup peach preserves (the kind with no added sugar)
1 teaspoon freshly squeezed lemon juice
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon ground cinnamon
Freshly grated nutmeg
Dash of sea salt.

Preheat the oven to 400 F.

In the unbaked crust of your choice, arrange the peach slices, in overlapping concentric circles. Sprinkle the peaches with the flour.

Combine the peach preserves, lemon juice, cinnamon, nutmeg, and a dash of sea salt in a saucepan and heat until hot while stirring.

Pour this glaze over the peaches and bake for 10 minutes, then turn the heat down to 375F and continue baking for an additional 30 to 35 mintues. May be served warm, at room temperature, or cold.

I was excited to find a peach pie recipe that isn't loaded with sugar and butter, but this recipe needs a little tweaking. Because it's basically just peaches on top of a pie crust, the moisture from the fresh peaches makes the crust soggy, and though I don't thinks it need a lot of sweetening, some would help.
