Of course coconut oil does not spike blood sugar, it is fat! Butter does not spike blood sugar either. Sugar spikes blood sugar, not fat.

On another level, I do not doubt coconut's health giving properties BUT just like avocados ( http://www.care2.com/greenliving/the-horrifying-truth-about-avocados.html ), now that everyone in the world wants coconut oil you KNOW it is going to corrupt the coconut growing process:

1. GMO
2. destroying rain forest land to grow MORE coconut to meet the demand
3. finding ways to make the process cheaper (and therefor the end product) to increase profits
4. Blah, blah, blah... the same old human corruption stories on every "commodity" that is deemed a "superfood"

Should we not stick with the superfoods that are local to us, grow in our local, regional areas?

Just a thought on keeping the earth less exploited in so many ways.
