Tropical Yogurt Parfaits

Yogurt is a health-boosting “superfood” because of its active probiotic cultures, its complete protein, calcium, B vitamins, potassium, magnesium, and zinc. When we add the C, antioxidants, and fiber of tropical fruit to the creaminess of naturally-sweetened yogurt, we end up with a dessert (or breakfast) worthy of the gods. Here is the super recipe:


1 cup cubed fresh papaya
3 cups plain nonfat yogurt
2 tablespoons maple syrup
4 tablespoons ground flaxseeds (for Omega-3)
1/2 cup sliced almonds
1 cup fresh blueberries, or frozen blueberries, thawed
1 cup cubed fresh mango

1. Using 4 parfait glasses, place some of each of these ingredients in layers: papaya, then yogurt, flaxseeds, almonds, blueberries, mango.

2. Repeat these layers until ingredients have been used up (aim for about 4 layers of fruit and yogurt). May be served immediately, or refrigerated for several hours.

Serves 4.

My favorite yogurt parfait is topped simply with granola, stirred in and allowed to sit till the granola is just toothsomely soft. Yum.
