Vegan Avocado Pesto Pasta (video)

Twenty two year old vegan chef Chloe Coscarelli recently received widespread acclaim and $10,000 when she won “Cupcake Wars” on TV with her vegan cupcakes. Lots of people thought vegan cupcakes didn’t stand a chance against traditional cupcakes with eggs and butter, but Chloe did it.

Now she is back with another of her easy vegan dishes that you have probably never thought about: avocado pesto pasta. Avocados are one of the healthiest foods you can eat and this video will give your family something new and delicious for supper tonight. So hurry down to the store, buy that avocado, and get started.

That pesto sounds good enough to make for dinner tonight. Having recently gone vegan after being vegetarian for over 30 years, I do have a sense of freedom regarding my choice of foods. It simplifies life, yet there are so many great recipes to try and not enough time to eat them all. I feel stronger and my ability to work out and life weights, as well as run, has increased in the short time since I switched to a plant based diet. You meat eaters don't know what you're missing, including bovine growth hormone, antibiotics in the meat you eat and unsafe dairy and eggs from agrifactories where your future meat and dairy is tortured beyond your wildest imagination. I sprang a vegan cupcake on my husband last night and he loved it. It may take a while, but I know he will make the switch to veganism for his health and for the great benefits in energy and reversing disease.
