Winter Supper Salad – Recipe
The great Helen Nearing showed us how to live with intentional simplicity — and how to make delicious whole foods with ease.
This simple, sweet and crunchy salad is easy to make, filled with flavor, and bursting with good nutrition. It makes use of seasonal ingredients, and takes practically no time to fix. Children love it, and so will you.
½ head lettuce or cabbage, finely chopped
4 stalks celery, chopped
1 green pepper, chopped
3 apples, chopped
¼ cup chopped nuts (walnuts are a terrific source of omega-3 fatty acids)
¼ cup oil
2 tablespoons vinegar
Combine the lettuce or cabbage with the celery, green pepper, apples and nuts. Add the oil and vinegar, tossing to coat the ingredients well.
Makes 4 servings.
