Piles of peas come vibrantly alive with crunchy radishes, salty feta cheese and a zesty honey-lime dressing. This combination of clean and fresh flavors couldn�t be easier, or more simply invigorating�it makes eating your peas a pleasure.
INGREDIENTS
2 teaspoons cumin
2 tablespoons fresh lime juice
2 teaspoons honey
1/4 cup extra-virgin olive oil
3 tablespoons chopped fresh dill or mint
4 cups fresh shelled peas (start with 4 pounds of peas in pods) or 1 pound frozen peas
1 bunch radishes, trimmed and thinly sliced
1 cup crumbled feta cheese (about 4 ounces)
3 cups fresh pea tendrils, pea sprouts, or baby greens (optional)
1. Stir together lime juice, honey, and cumin in a small bowl and slowly whisk in oil. Mix in dill or mint and season dressing with salt and pepper.
2. Cook peas in salted boiling water until almost tender�-fresh peas should take about 5 minutes and frozen should take about 2 minutes. Rinse immediately under very cold water and drain well.
3. Put peas in a large bowl and toss with radishes, feta, and dressing.
4. If using pea tendrils, sprouts or baby greens, divide the greens among bowls and place pea mixture on top.
Serves 6 to 8.
