As a retired chef, this is fascinating stuff.
It's gets my imagination working, and gives me
a severe desire to get back into a kitchen.
As a guy who hasn't had dinner yet, it makes

Noted. I've a number of Iranian fiends in my former city of residence, Austin, and when I was invited to a meal in their home (a very special mark of favor in itself to be invited home), you can bet I was there! The hospitality was always warm and the food pungent and often even warmer!!!LOL. Oh, I should have skipped the article, as I will not be satisfied with my stuffed bell peppers after thinking about the food mentioned here and those native dishes my friends introduced me to. Very interesting story; thanks, Cate!

The cuisine of India was greatly influenced by invasion of Persia. Today the food which is labeled as 'Mughlai' pretty much a byproduct of Iranian cooking. I was in Iran long time ago and I learned few dishes then but since I have stated to eat meat recently I learned few dishes from Hydrabad a city in Southern India known for its highly acclaimed Mughlai dishes. (mostly Meat Tandoor dishes and the bread 'Naan'). Kababs..yumm! Sheer mal and Koftas...

Persian food is good - but I especially love Afghani and Turkish food! Basmati rice is a staple in my house. All of this sounds great...

Of course food isn't the only thing to come out of that part of the world. The beauty of the land and the people, the birthplace of civilization, as we know it, offered some of the most beautiful scenery and opportunities. Enter oil and then BIG OIL .. MONEY.. and the face of a nation, no, a region has changed.
