Great article for those who already bake bread or those who'd like to start. You KNOW that bread you make yourself is going to healthier and fresher than anything you buy at the grocery store. Great recipes at this site, too.

Oh, there's nothing better on a chilly winter evening than a pot of hot, hearty homemade soup and a loaf of fresh homemade bread to go with it - add a salad and you have a meal. I love to bake but I admit when I began with bread years ago, I turned out a few bricks before I developed the knack of getting it right. This story will tell you everything you "knead" to know (groan -sorry -LOL!) to begin baking the best and healthiest breads you'll ever eat.

I have always had the talent for baking and cooking. Nothing to fancy but good home cooking. One of my specialties is homemade rolls or biscuits or how about some sweet rolls maybe cinnamon OH I could go on but I will not!That was before Florida since I moved here I do not bake much. I still like to eat it though. That is the sad thing. Well still working on that one.I think I will make some homemade vegetable soup.YUM!! Now you started something,Cate! Thanks,Cate.

I could go for a fresh-baked loaf about now,
with some homemade strawberry preserves.
I don't bake my own bread, not even being
a retired chef, I've never baked bread.
I have to agree with Chef Anthony Bourdain:

Couldn't agree more ...homemade bread is the greatest, and if you've ever had the opportunity to sample German bread or baked goods...well I'd have to rate it as the greatest...another plus with making bread from scratch is when you've had your feel of the bad news out there you can really getting out your frustrations kneading the dough !~

Bread-Ahh so good. How many of you have had real good homemade SourDough Bread. My wife makes this and it is unbeleivably good. The Starter we have has been kept going since the 1890's. It's relatively easy to get started making SourDough Bread. If you are interested I ran across a great website that has starter recipes along with several recipes for bread, pancakes, and other bread related recipes, It's Home-almanac.com Enjoy and thanks for having me...

My Mom make the best home made yeast rolls get them right out of the oven still good and hot and cut them open and put the butter to them yum yum!!! nothing like it. I can do home made Biscuits but the bread I haven't gotten it down pat yet. you could knocked a Bull down with my first try to be sure lol!!! It smelled good but that was it. Thanks Cate. I'm having some fresh peaches right now.

We try to bake our bread but some weeks this Texas heat wants you out of the kitchen and we have gotten some of the sorriest whole wheat flour lately. You shoud see what they called a scone at the big market I had to laugh big dough ball punched out w/ cookie cutters looked like haha! chris

My mother always made homeemade bread and jam. I can still smell it. We bought a bread machine for her, so it would be easier to knead and of course, she would make us more. LoL. My mouth is watering now. Noted with thanks Cate.

Once a week liz bakes the bread for the week...being Diabetic it has become a feature of our lives that we eat home made, stone ground wholemeal bread...because bought bread is bulked out with loads and loads of sugar (tue by the way) which play havoc with the readings. Sugar is added to all kinds of foodstuffs as a cheap bulk...and then they wonder why the population is overweight.
Making our own we use about a teaspoon full of sugar for eight loaves. (makes the yeast work)....you do the math...when breadmakers (the machines) seem to want a tablespoon full for each loaf.

And yes the house smeel lovely each week...and it freezes well too.

I make one loaf every day.The aroma of bread baking and coffee brewing is nicer than any air-freshener. White, wholemeal, French, granary, raisin, sun dried tomato etc etc, You name it, my Morphy Richards breadmaker bakes it. You may think this is cheating but the ingredients are pure and natural and the bread is delicious.

Home made bread is great, I bake a zucchini peanut butter bread today it was out of this world. but of course it is nut to healthy but oh sooo good.

I started baking bread when I first got married(starry eyed newlywed!), and continued on after the divorce. My daughter grew up eating it, you throw it together, rises overnite, cook it in a coffe can, turns out like English muffins. Now I have to find that recipe! Thanks, Cate, Yum Yum.

Yum! I love baking bread. I started out helping my mother bake bread when I was 10, and was making my own by 12. It's one of my favorite passtimes. :)

Our bread is all hand made and 'prooved' in the boiler room till it rises...the smell even before it cooks is so good all yeasty and good...but as it cooks the house fills with that wonderful smell...you just miss so much if your idea of bread is some pappy rubbish full of chemicals and fresh air in a plastic wrapper that will pollute the world for the next three hundred years.

No real bread comes from your own oven, made with your own hands...tried a bread making machine once but it took too much sugar for me and I have to be careful about that.

I used to live in a town where they had a bread factory, the whole town smelled of fresh baked bread everyday all day.
Now I make my own bread, but I use a solar oven I made myself, no matter how long you wait, it always turns out right. And you don't have to worry about the kitchen getting heated up in summer.
I remember the first time I made bread, had to put it in a vise and use a hacksaw to cut it open, then I scooped out the bread, I prefer the crust, but what can ya do when it's so hard you can't break it with a hammer.

Thanks Cate. Love homemade bread. You made me so hungry when I saw the bread picture that I had to grab some pumpernickel bread from the freezer and warm it up. Made some broccoli-cheese-rice-turkey soup to go with it. All so very good. Acting a little rainy here today so I may just go bake something maybe a quick cinnamon bread and some chocolate brownies. For some reason I think I need some good chocolate! Then I can make some biscuits for supper and make some turkey gravy to use up some of the left-over turkey. Gave most of it away, but still have a small freezer bag to finish up. If I keep eating all this good stuff I just might have to walk
all the way across the state just to burn off the calories. That probably wouldn't work too well as I would probably have a backpack full of bread and chocolate and keep nibbling on it. Better to get on my treadmill with
no backpack. Think I will do that - right after I put something else in the oven to bake. Have a happy and healthy day.

MMMMMMMMMMM!!! My mom bakes the best *LIGHTNIN ROLLS* that I know of from scratch! Otherwise known as Yeast Rolls...LOL. In fact...just had some this past weekend at her house...and YES I ate TWO! She did biscuits last nite...and I ate two of them too! Living alone...if I bake it...I eat it all...or it gets thrown out...either way...not a good thing. LOLOL. So for now...I enjoy my mom's! Makes it a special treat that way! I do have a bread maker and the first year I had it, I didn't buy a loaf of bread. YUM YUM! But...an article I read in a Yoga book, likens making bread to meditating. Something about the hand kneading the dough...is calming and soothing to the soul....like yoga! Fancy that! Maybe I will start baking my own again...but without the bread maker? LOL Great article...noted with pleasure!

Malachi, you brought back memories...I grew up about a quarter mile from a PIE bakery - oy my Goddess, the aroma...all kinds of fresh pies baking...and drying in racks that were open to the air via big doors....we used to trot up there and buy fresh miniature pies for only 5 cents each, and picking only ONE was difficult - peach, cherry, blueberry, coconut custard, lemon, strawberry, apple...one of the happiest memories of my childhood...

I love to bake bread,rolls,donuts etc.It is a great way to spend time with your kids and grand kids if you have them.They learn from you and vice versa.The best part is the taste.my grandmother was Pa.Dutch and a great cooking teacher for us kids.Try it just once.It is worth it.
