17 Appetizers for the Oscars

Hollywood elite will be out in full force this weekend for the 85th Annual Academy Awards. Though I’m betting that like me, you’re not rich and famous enough to attend the real-deal, at least we can watch it on TV. So let’s not leave all the fun and glamour to the celebs and have some for ourselves. Check out these tasty appetizers that’ll have you seeing stars. Better prepare that acceptance speech for “Best Supporting Hors D’oeuvre!”

Before we roll out the red carpet for the edibles we must start out with the perennial Oscar Party favorite,†the champagne cocktail. Or, to be clear, punch!

Pomegranate-Champagne Punch

  • 1 750-ml bottle brut champagne, chilled
  • 1/4 c. water
  • 1/4 c. sugar
  • 3/4 c. white rum
  • 2/3 cup pomegranate juice
  • 1/2 thinly sliced lemon
  • Pomegranate seeds
  • Fresh mint leaves
  • Block of Ice
1. Make simple syrup. In small saucepan, bring water & sugar to boil, around 5 minutes. Once all the sugar dissolves, remove from heat and let cool completely.
2. In a punch bowl, combine champagne, juice and rum. Add simple syrup to sweeten, and mix in seeds, mint and lemon slices to taste. Add ice block to cool.

Sweet Potato Potstickers

  • 1 peeled and cubed sweet potato
  • 1/2 cubed yellow onion
  • 1/4 tsp. olive oil
  • 1/3 c. ricotta
  • 1/4 c. parmesan
  • 1 tbs. fresh rosemary
  • 1 1/2 doz. wonton wrappers
  • sunflower oil
  • sea salt and pepper

1. †Combine sweet potatoes and onions. Spread out mixture on cookie sheet lined with parchment paper and bake at 400 degrees for about 30 minutes, or until mixture is tender. Cool slightly before using.
2. Combine sweet potato/onion mixture, rosemary, parmesan, ricotta & dashes of salt and pepper in food processor. Pulse until relatively smooth. Some lumps are okay.
3. †Add one tablespoon of filling in the middle of each wonton wrapper. Using water, wet the edges and “crimp” so they’ll stay in place. With a pastry brush, lightly coat each potsticker with sunflower oil.
4. Bake at 350 degrees for 15-20 minutes. Potstickers should be golden brown.

A super easy (and super tasty!) appetizer. Simply slice up a baguette, drizzle some olive oil, sprinkle some salt and pepper and bake at 350 degrees until golden brown! I personally like to add some oregano and/or rosemary to my bread, but that’s totally optional. Here’s the classic recipe. See below for more ideas!

Tomato Basil Bruschetta

6 seeded and diced plum tomatoes
2 minced garlic cloves
3 tbs. minced basil
ľ tsp. kosher salt
Pepper to taste
1Ĺ tbsp. olive oil
2 tbsp. grated Parmesan

1. Combine all ingredients in bowl, taking care to blend well. Cover and refrigerate for at least 30 minutes.
2. Spoon onto toasted bread slices.
