Okra Sautéed with Cashews and Garlic

Okra Sautéed with Cashews and Garlic

Cashews in this okra dish adds a crunch and the garlic lends a spicy taste to this tasty meal. It’s also a complete meal when you add a whole grain like quinoa or brown rice.

Ingredients:

3 cups Okra
1/3 cup Cashews, roasted
1 Tsp Almond oil
1 – 3 gloves Garlic, chopped
Lemon or lime zest
Salt and pepper to taste

Directions:

  1. Make sure you have roasted cashews.
  2. Cut off both ends of the okra.
  3. In a large frying pan, heat the oil.
  4. Now, add the okra, sprinkle with salt and pepper and fry on high heat, stirring, until tender which will be about 10 minutes.
  5. Add the garlic and cook over moderate heat until softened, about 3 minutes.
  6. Stir in the cashews and lemon or lime zest.

Bhindi Masala

Bhindi Masala (Okra with Tomatoes)

This is a very special dish from India, and the first way I enjoyed okra.  My friend, Karuna, whom I met here on Care2, sent me this delicious recipe.

Ingredients:

12 Okras
1 Onion
2 Tomatoes
3 tsp Oil
Pinch of Mustard and fenugreek seeds
Pinch of asafoetida (optional)
1/4 tsp turmeric
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp red chilli powder (optional if you don’t like hot spicy food)
Salt to taste
Water

Directions:

  1. Cut off both ends of the okra, and then slice into one inch pieces.
  2. Slice onions and dice tomatoes, keep separately aside.
  3. Temper one teaspoon oil with mustard, fenugreek and asafoetida.
  4. Add 2 more teaspoons of oil; add onion and sauté until translucent.
  5. Add the tomato and soften.
  6. Add the okra and let cook for a minute.
  7. Add ¼ cup water and allow it to cook. If needed, you can add more, but don’t make it too mushy or watery.
  8. Add turmeric, cumin powder, coriander powder, red chilli powder.
  9. Salt to taste.
  10. Cook for 5 to 7 minutes or till water dries out.

Crispy Fried Okra

Crispy Fried Okra is Very Tasty

This crispy okra recipe has a tasty flavor that is amazing. Fresh okra with a beautiful golden brown color and a crunchy texture is a special addition to any meal! Also, it is gluten-free and vegan too, no eggs or wheat flour. This is for sure my favorite okra recipe.

Serves: 4-6 servings

Ingredients:

2 flax meal eggs (2 Tbsp of flax meal mixed with 6 Tbsp of warm water)
12 fresh whole okras
1/2 cup brown rice flour
1/2 cup yellow cornmeal
1/2 tsp Salt
1/2 tsp paprika
Coconut oil for frying

Directions:

  1. Make the vegan eggs in a medium bowl and let sit for 10 minutes.
  2. Cut off ends of the okra and slice into 1/2 inch pieces.
  3. Put the okra into the bowl of vegan eggs.
  4. Mix rice flour, cornmeal, salt and paprika into a small bowl.
  5. Then dip the okra into cornmeal and flour coating.
  6. Heat oil in a frying pan over medium high heat.
  7. Fry okra until golden brown.
  8. Remove and drain on paper towels.
  9. Serve as an appetiser or as a side dish for a meal.

My grandmother used to make a variation of Bhindi Masala (Okra with Tomatoes). As I recall, I thought it was hot and used to mix cottage cheese with it to "cool it down." Of course my grandfather hated the pink colored mess on my plate. I may try that dish. I like okra.
