9 Ways to Use Lettuce Besides in Salads

Lettuce season is upon us! If you belong to a CSA get ready for head after head of lettuce. Week after week. For someone like me that isn’t crazy about salad, that can be a little bit overwhelming. These are salad-free recipes to use up all of that good spring lettuce. Y-U-M!

Poor lettuce gets short shrift when it comes to the leafy greens, but many lettuces are unsung nutritional heroes. Not all lettuces are created equal, though. When you’re choosing a lettuce you get more nutritional punch when you avoid iceberg lettuce and reach for romaine, butter, or greenleaf lettuces instead.

Romaine packs twice the fiber and significantly more vitamin A than butter or greenleaf lettuce, but these varieties win out when it comes to vitamin K. All three of the more nutritious varieties of lettuce provide a gram of iron in a modest 1/2 cup serving.

Lettuce in soup or as a sauce base might sound a little bit odd, but lettuce adds a lovely flavor profile to these recipes.

1. Green Soup with Spinach, Lettuce and Parsley - Eat all of the greens! This pureed soup recipe packs a super green punch with green parsley, spinach and lettuce.

2. Cold Coconut Cream of Lettuce Soup – Cold soups are so lovely on warm spring and summer evenings. This curried coconut soup is rich, flavorful, and satisfying.

3. Rice Noodle Soup with Lettuce and Shiitake Mushrooms – Wilted lettuce still adds a little bit of crunch to this bowl of comfort food.

4. Lettuce Pesto – Make this a vegan recipe by using nutritional yeast in place of the cheese.

Smoothies

Green smoothies are a great way to get some lettuce into your day. Unlike hardier greens like kale and collards, lettuce blends up easily. Perfect for sneaking some veggies into your kid’s morning, too.

I do enjoy green pea and lettuce soup, which I first encountered in an airline meal. Before then I hadn't thought of lettuce as a soup vegetable.
