Cinco de Mayo Guacamole

Are you throwing a Cinco de Mayo party?  Here’s my favorite healthy and delicious guacamole recipe.  Enjoy it on top of mixed greens, tortilla chips, with vegetable crudités, or on its own as a delicious avocado salad.


2 avocados

1 tomato

1 red or yellow pepper

1 Tbsp purple onion, minced

Handful of fresh cilantro

½ jalapeno chili (optional)

1 lime

½ tsp. unrefined sea salt


Cut the avocados in half lengthwise, remove the pit and scoop out the inner flesh.  In a medium-size bowl, mash the avocado.  Finely dice the tomato and pepper.  Add to the avocado mixture.  Mince the purple onion and add to the avocado mixture.  Finely chop the cilantro and mince the chili.  Add to the avocado.  Squeeze the fresh lime juice over the avocado vegetable mixture, add the sea salt, and stir together until well mixed.  Serve over a bed of greens, with vegetable crudités, or eat on its own as a delicious salad.  Serves 2 as a meal or 4 as a side-dish. Enjoy!
