Crispy Kale Pizza | adapted from The Kitchn

(*use organic ingredients as often as possible)

1 large diced or sliced fresh tomato (go for an heirloom if you’re feeling extra colorful!)
2 cloves finely minced garlic
1 small bunch lacinato kale
2-3 Tablespoons olive oil
1 store-bought or homemade pizza dough (room temperature)
1 cup fresh ricotta cheese

Preheat oven to 400 degrees F.

De-stem cleaned and dried kale and rip into 1 inch pieces. Toss in 2 Tbsp. olive oil. Spread kale in a single row on a baking sheet, season lightly with salt, and bake 12-15 minutes, or until crispy.

Raise oven temperature to 500 degrees F.

While oven preheats, lightly saute garlic in 1 Tbsp. olive oil on medium heat, until aromatic — about a minute. Set aside.

Slowly stretch dough with floured hands and set on a baking stone (the stone must be preheated — a greased baking sheet will do in a pinch).

Scatter fresh tomato, dollops of ricotta, crispy kale, and garlic over the dough.

Bake for 12 minutes, or until cheese bubbles and crust is golden. Let cool. Enjoy!

6 Ways to Really Love Kale

There's a major problem with this recipe.

The over-baked kale just wouldn't make it to the pizza because I couldn't help scoffing it. Just love my kale. Perhaps the only answer is to bake two batches? :)

This looks like a good pizza recipe for fans of kale and of course, homemade pizza.
