Cooking gadgets are getting super popular right now, including among vegan food bloggers. I think that may be part of what’s fueling a misconception that you need an Instant Pot or an air fryer to cook vegan food, but this just isn’t true.

Sure, kitchen gadgets can save time in the kitchen, but you can make plenty of delicious, easy vegan meals without a single fancy appliance.

It’s certainly nice to have a food processor, a high speed blender and other nifty kitchen technology, but it’s not a requirement. The vegan recipes below prove that you don’t need any expensive appliances to make delicious vegan food. The fanciest tool you’ll need is a blender.

Making cranberry sauce from scratch can seem daunting but it’s actually really easy and fun! Fresh cranberries pop as the simmer on the stovetop in this reduced-sugar cranberry sauce recipe.

3. Quinoa Porridge

Leftover quinoa is the secret to this gadget-free vegan recipe. Armed with cooked quinoa, you can make a superfood porridge in the time it would take to make regular old oatmeal.

4. Sesame-Lime Butternut Squash

Your regular blender and a sharp knife are your weapons of choice for this flavorful holiday side dish. If you don’t have a blender, you can just mince the ginger by hand, then whisk the sauce ingredients together in a small bowl.

5. Coconut Black Bean Soup

The cooking method for this soup might be basic, but the flavors are anything but! Rich coconut milk, fresh ginger and hearty black beans make this simple soup as tasty as it is easy.

6. Mashed Potatoes

You don’t even need a potato masher to make perfect vegan mashed potatoes. Just grab a fork, and use a little elbow grease to turn out your perfect bowl of mash.

7. Autumn-Spiced Granola

Store-bought granola can be pricey. Once you make your own, you’ll never go back! All that you need to make your own granola are an oven and a cookie sheet.

8. Pumpkin Chocolate Chip Cookies

Don’t put that cookie sheet away just yet! While it’s out, you may as well whip up a batch of these easy chocolate chip cookies. Pumpkin and applesauce replace the egg in these one-bowl cookies.

9. Spinach-Mushroom Pockets

Store-bought puff pastry isn’t the healthiest ingredient, but did you know that a lot of premade puff pastry is free of animal products? This savory recipe takes advantage of accidentally-vegan puff pastry to make easy, savory Spinach-Mushroom turnovers.

10. Massaged Collard Greens Salad

Massaged kale isn’t the end-all when it comes to dark, leafy green salads. You do make this dressing in your blender, but if you don’t have a blender, you can use your favorite sweet vinaigrette in place of the dressing in the recipe.

11. Baked Cabbage Rolls

One pot, one pan and a little bit of technique are all that you need to make these flavorful cabbage rolls. Instead of meat, chickpeas are the stars of this vegan version of an old family favorite.

15. Lettuce Wraps

Lettuce wraps are a meal that feels fancy but is actually a snap to make. This recipe bakes the filling instead of pan-frying, for less oil and less hands-on time.

16. Macaroni and Trees

You can make the vegan cheese sauce for this vegan mac in a high speed blender, but it’s not a requirement. Before I got my high speed blender, I frequently made this sauce in a regular blender. You just need to be patient—keep on blending, and you’ll end up with a smooth sauce!

17. Peanut Noodles

A blender makes this recipe easier, but it’s not required. To make the peanut sauce without a blender, just use 2 teaspoons ground ginger instead of fresh, and whisk the sauce ingredients together in a large bowl. Add water by the teaspoon, if needed.

18. Lasagna

This is another recipe with blender-made vegan cheese sauce. And like the Macaroni and Trees above, you don’t need a high speed blender to do it. A conventional blender plus patience will do the trick.
