Two-Ingredient Fluffy Vegan Pressure Cooker Mashed Potatoes

Only two ingredients (not including salt and water) and about half an hour stand between you and these light, fluffy, Pressure Cooker Mashed Potatoes. No vegan milk needed!

My family is obsessed with mashed potatoes, so I make them at least once a week, sometimes even more, and when the pantry is getting bare, I like to experiment with new ways to make delicious mashed potatoes. Sometimes, my experiments are flops, but these Fluffy Vegan Pressure Cooker Mashed Potatoes get consistently rave reviews. And they couldn’t be simpler to make!

You can make these in an Instant Pot or a stovetop pressure cooker. Instead of adding vegan milk at the end, you’ll use the leftover starchy cooking water to mash your potatoes. It might sound a little dubious, but trust me. My family likes these even more than the ones I used to make with vegan milk!

Ingredients

  • 4 cups chopped thin-skinned potatoes (1" pieces. Yellow, red, or white are fine, but yellow is my favorite. Do NOT use Russet potatoes for this recipe.)
  • 1/2 cup water
  • 2-3 tablespoons olive oil OR avocado oil OR vegan butter
  • sea salt, to taste (You'll need less salt if you used vegan butter, since it already has salt in it.)
  • chopped green onions (optional)

Instructions

  1. Toss your potatoes into your pressure cooker. Pour in the water, and give a quick stir. Bring to high pressure for 5 minutes, then do a natural release (at least 10 minutes).
  2. Transfer the potatoes and the cooking water (DO NOT DRAIN!) to a large bowl. Add the vegan butter or oil, and mash until you reach a light, fluffy texture. You can add water, one tablespoon at a time, to thin, if needed.
  3. Salt to taste, and serve hot. You can top with a little green onion, if that's your thing.
