Healthy Holidays: Delicious Vegan Eggnog

I remember as a kid loving the taste of eggnog. Until that year when I was about 11, I got into my uncle’s eggnog “adult” batch after Thanksgiving dinner and got so drunk and so sick, I had to spend the night at my cousin’s house in Long Island. Yea, I’ve never had spiked eggnog since.

But I’ve always rather loved the creamy, warm and spicy flavor of this drink. Of course it isn’t very vegan friendly with all that milk, cream and eggs and all. So, I gave it up many years ago.

Until last year, when I accidentally discovered a smoothie recipe that tasted just like the non-alcoholic wonderful eggnogs of my youth.

  • 1 ripe banana
  • 2 tablespoons almond butter
  • 1 inch peeled fresh ginger
  • 1 - 2 tablespoons maple syrup
  • 1/2 - 1 teaspoon organic vanilla powder (or 1/4 teaspoon vanilla extract)

  • dash each (to taste really) ground cloves, cinnamon, nutmeg

Instructions

  1. Blend on high thoroughly, pour in your favorite mug/cup and enjoy!
