Butternut squash is such a fall staple, and there are tons of delicious ways to enjoy this seasonal gourd. What I love about this recipe is how simple it is and how the lime and sesame oil play so well with the slightly-sweet roasted butternut squash.

If you’ve never worked with winter squash before, it can seem a little bit intimidating, but don’t worry! It’s much easier to cube up than you’d think. Use a regular vegetable peeler to remove the tough outer skin, then use a large, very sharp knife to slice the squash in half and use a spoon and clean hands to remove the strings and seeds. From there, just chop it up into 1″ cubes, and you’re ready to make Sesame-Lime Roasted Butternut Squash!

Ingredients

  • 1 butternut squash, seeded and cubed
  • 2 tablespoons toasted sesame oil
  • juice and zest from 1 lime
  • 2 cloves garlic
  • 1" piece of ginger
  • 1 tablespoon agave nectar
  • 1 tablespoon soy sauce

Instructions

  1. Preheat the oven to 400F
  2. In your blender or food processor, combine the sesame oil, lime juice (NOT zest), garlic, ginger, agave nectar, and soy sauce. Blend until smooth.
  3. Toss the sesame oil mixture with the butternut squash pieces in an 8x8" glass pan, and bake for 30-40 minutes, stirring every 10 minutes, until the squash begins to brown. During the last 10 minutes of cooking, check in every 5 minutes.
  4. Sprinkle on the lime zest just before serving.
