Simple and Cozy Lentil Chili

Welcome in fall with this simple and cozy lentil chili. Most of the ingredients are likely already in your pantry, so it’s a good go-to recipe when you need something but don’t have time to run to the grocery store. Try itwith a corn muffin or corn chips.

3 cups chopped onion
3 tablespoons olive oil
1-2 tablespoons salt
1 tablespoon ground cumin
1 tablespoon granulated onion
1 tablespoon granulated garlic
14 oz. can tomato sauce
cup ketchup
4 cups lentils
12 cups water (more as needed)
1 tablespoon smoked paprika

  • Cook lentils in water for 30 minutes on medium low heat after bringing to a boil.
  • Saute onions in pan with olive oil until caramelized, about 10 minutes. Add to lentils.
  • Add remaining ingredients except for ketchup and paprika. Cook another 20 minutes or until broth gets creamy. Add more water as needed.
  • Add ketchup and paprika and serve.

Serves: 10

Total cooking time: 1 hour
