Ingredients

  • 1 1/2 cups unsweetened coconut water
  • 4 cups watermelon
  • 1/4 cup mint leaves
  • one lemon, cut into 1/4" rounds

Instructions

  1. Combine the coconut water and watermelon pieces in your blender or food processor. Puree until smooth.
  2. Add the mint leaves and lemon slices to a pitcher, then pour in the watermelon puree you just made. Serve over ice.
