Hearty Tomato Lentil Soup

A nice hearty bowl of soup sometimes is all you need. Full of protein, vitamins and nutrients, this soup is a great flavorful and nutritious meal for Meatless Monday or any day of the week.

1 ½ cup brown lentils
1 onion, chopped
1 teaspoon garlic, minced
2 stalks celery, sliced
3 carrots, peeled and sliced
1 cup red potatoes, cubed
1 can (14 oz.) chopped tomatoes
2 teaspoons tomato paste
3 tablespoons butter of choice
10 cups water
2 teaspoons sea salt
2 teaspoons granulated onion
1 teaspoon granulated garlic
½ teaspoon pepper

  • In pot combine lentils with water and bring to a boil. Cook for 20 minutes on low simmer, uncovered.
  • In pan, sauté onion, celery and garlic until tender. Add to pot.
  • Add potatoes, carrots, butter and seasonings and continue to cook another 20 minutes.
  • Be careful not to let burn. Stir every 5 or so minutes when it starts to get thick. You can add more water if needed also.

Serves: 6-8

Total cooking time: 1 hour
