We learned all the differences between wild blueberries and domesticated ones here. I am a big fan of the wild variety so here are 5 delicious Wild Blueberry recipes.

I have always loved date squares, but these blueberry ones take this treat to a whole other level.

Ingredients:
2 1/2 cups blueberries
1/2 cup coconut oil
1/4 cup rice syrup
1/2 tsp. salt
2 1/2 cup oats
1 cup brown rice flour
1/2 cup chopped walnuts

Directions:
1. In a bowl, mix coconut oil, rice syrup and salt.
2. Add oats and flour.
3. Mix well.
4. Pat 2/3 of the mixture into an 8 X 8 pan.
5. Sprinkle the blueberries on top of the oat mixture.
6. Then sprinkle the other 1/3 of oat mixture on top of the blueberries.
7. Lightly press down.
8. Bake in preheated oven at 400 degrees Fahrenheit for 25 to 35 minutes.

Wild Blueberry Juice

Wild Blueberry Juice

This blueberry juice is very refreshing and easily made in less than 5 minutes.

Ingredients:

1 cup frozen wild blueberries
1 cup hot/warm water
½ tsp liquid stevia – optional

Directions:

1. Put the blueberries in a blender jar.
2. Now add the water; it is good to have it hot-ish to melt the frozen blueberries. If you let the blueberries thaw then just use room temperature water. Same if you are using fresh blueberries.
3. Add stevia (which is optional).
4. Blend on liquefy until juicy.
5. Pour in glasses and serve blueberry juice immediately.

Wild Blueberry Crumble Recipe

This blueberry crumble recipe is easy to make and sugar-free. If you use gluten-free oats then it is gluten-free as well.

Blueberry Base

Ingredients:
1 – 2 apples
2 cups wild blueberries
Stevia – light liquid

Directions:  
1. Core and slice the apples.
2. Simmer apples with a few spoons of water in a covered pot.
3. Mix in berries and simmer a few more minutes.
4. Sweeten to taste with stevia.
5. Place berry/apple mixture in a baking dish

Crumble Topping

Ingredients:
1 ½ cups brown rice flour
1 cup rolled oats
1 tsp. salt
1/3 cup vegetable oil
1/4 cup rice syrup
1/4 tsp Stevia – light liquid

Directions:
1. Mix dry ingredients together
2. Mix oil, stevia and rice syrup and add to dry ingredients.
3. Mix thoroughly.
4. Sprinkle on top of the fruit
5. Bake at 350 degrees Fahrenheit in the oven for approximately 40 minutes.

Wild Blueberry Keto Smoothie

Sweet Wild Blueberry Keto Smoothie

I love this wild blueberry keto smoothie. It is perfect for a quick breakfast or makes a tasty afternoon snack. What makes it keto is that there are only a small amount of blueberries in it and all of the other ingredients are keto friendly. I make it a little sweeter by adding a few drops of stevia to mine.

Ingredients:
1 Cup Coconut Milk
1/4 Cup Wild Blueberries, fresh or frozen
1/4 tsp Vanilla Essence
3 Tbsp Hemp Seeds
Liquid stevia, few drops, to taste

Directions:

  1. If using frozen blueberries, let them thaw first.
  2. Put all of the ingredients into a blender.
  3. Blend until nice and smooth.
  4. Pour into a tall glass and enjoy your blueberry keto smoothie.
