good post, really easy to read and understand. I agree that it is helpful to be able to hold the knife in your hand to see how it feels. Nothing worse than trying to hold an awkward knife. I've just recently started paying attention to the quality of my knives, and good quality knives are worth every penny. Much easier on the wrist when using a good quality proper knife, which is important if you have carpal tunnel or arthritis issues.

No. 1 rule - don't buy sets of knives! There's always too many of them you never use.
