1/2 pineapple, peeled and cored
1 red bell pepper, seeded
1 tablespoon chopped fresh mint (or 1/2 tablespoon dried)
1 scallion, minced
1/2 jalapeņo pepper, seeded and minced
3 tablespoons fresh orange juice
2 tablespoons fresh lime juice
1 1/2 tablespoons fresh ginger, peeled and minced
1 1/2 tablespoons finely chopped fresh cilantro
Dice the banana, pineapple and bell pepper into 1/4 -inch pieces.
Mix all ingredients together in a large mixing bowl.
Salt to taste. Let the salsa stand for one hour in the refrigerator, allowing the flavors to combine.
